Ingredients

  1. For the dough
  2. 1 1/2 cupmaize flour
  3. 2 tbspgram flour
  4. 3/4 cupwheat flour
  5. to tasteSalt
  6. 2 tbspchilli flakes
  7. as neededWater for binding the dough
  8. 2 tbspoil
  9. For the stuffing of 1 St layer
  10. 1 cupBoiled corn, capsicum, carrots
  11. 1medium.sized boiled potato
  12. to tasteSalt
  13. 2-3 tbspgreen chutney
  14. 2 tspsugar
  15. For the second layer stuffing
  16. 1/2 cupgrated tofu
  17. 2 cubesgrated processed cheese
  18. 1/4 cupfinely chopped capsicum
  19. 2 tbspchilli flakes
  20. 1 tsppepper powder
  21. to tasteSalt
  22. as neededOil for shallow frying
  23. as neededRice flour for rolling
  24. For green chutney
  25. 1/2 cupcoriander
  26. 1/2 cupmint
  27. to tasteSalt
  28. 1 tspsugar
  29. 1lemon's juice
  30. as requiredWater for grinding
  31. 8-10green chillies
  32. For slurry
  33. 2 tbspmaida
  34. as neededWater as required

Cooking Instructions

    For green chutney

    Mix all the ingredients and add enough water and grind to smooth paste and keep aside.

    For the dough

    Mix all the ingredients in a plate

    Add enough water and bind medium soft dough and oil and knead to make soft.

    Then in a vessel mix all the veggies, salt, green chutney and sugar.

    Mix everything homogeneously and 1 St stuffing is ready.

    For 2 And stuffing

    Mix tofu, cheese, chilli flakes, capsicum, salt and pepper in a bowl

    And 2 And stuffing is ready

    How to proceed make a small ball of the dough and roll to a thin roti using rice flour.

    Shallow fry on hot tawa using oil on both the sides till completely cooked and keep aside.

    Now make a slurry of little maida and water and keep aside.

    Now a make a little bigger ball and roll to a roti and spread the corn stuffing.

    Apply slurry on the edges.

    Now place the cooked roti on the stuffing

    Then spread the tofu stuffing.

    Now roll out an another roti and place on the tofu stuffing and press well to seal.

    Shallow fry on hot tawa using oil till golden and crisp on a slow flame.

    Cut the parathas and serve.
