For when you're in a hurry, red pozole made in a pressure cooker, quick and delicious 😄
Cooking Instructions

Rinse the pre-cooked hominy thoroughly and place it in the pressure cooker with 3 liters (about 3 quarts) of water and the halved head of garlic. Cover and let it boil for 30 minutes.

Once cooked, carefully release the steam from the pressure cooker.

Wash the pork thoroughly and cut it into small pieces, add it to the hominy along with half of the onion.

Separately, soak the seeded and deveined chiles in boiling water.

Once softened, blend them with a piece of onion, 2 garlic cloves, a bit of dried oregano, and water.

Add the blended mixture to the pot and season with salt to taste. Cover and cook; once the pressure cooker valve starts to sound, lower the heat and cook for another 20 minutes.

Serve with lettuce, onion, squeezed lime, and enjoy with some delicious tostadas with sour cream. Enjoy!
