作り方

Put a paper towel in a microwave safe container, place tofu.

Cover with a paper towel and nuke for 2 minutes at 600W.

Gather all the ingredients.

Oil in a large nonstick pan over medium heat.

Add carrots, mushrooms and salt, then cook until wilted.

Add tofu and break it into bite sized pieces and cook.

Gently stir to help evaporate excess moisture.

Reduce heat to medium low, add soy sauce/mirin/sugar/bonito.

Stir occasionally and cook for 3 minutes.

Pour the egg over the tofu and stir until heated through.

Add peas and scallions, and cook. Taste , add salt if needed

Serve!
コツ・ポイント
Cook off extra moisture from the tofu to prevent diluting the seasoning.
