Gather all the ingredients.

Combine all the sauce ingredients, and set aside.

Place noodles in a heat resistant glass bowl.

Pour boiling hot water over the noodles.

Let it soak until soft and clear. (5-6 minutes).

Transfer noodles to a colander and drain well.

Cut the noodles into bite sized pcs with scissors. Set aside

Oil in a large skillet over medium heat.

Pour in the eggs, and let them cook for a few seconds.

Stir/cook every few seconds to scramble the eggs.

Remove from the skillet and set aside.

Add oil/red pepper/garlic and cook until fragrant.

Add meat and cook until it is no longer pink.

Stir in chives and cook until wilted.

Add noodles and the sauce mix. Toss well to combine.

Taste, and season with salt and pepper.

Add the scrambled eggs and toss once more. Serve.
