After I cooked tuna mixed rice and tasted it, I thought something was missing. Then I added shio kombu...a GAME CHANGER!
作り方

Gather all the ingredients.

NOTE: Check recipe ID: 21456578 (2-5) for prepping the rice.

After the final rinse, drain the water.

Transfer to the rice cooker.

Add water 1/4" above the rice, let it soak 30 minutes.

Add tuna can's water, soy sauce, sake, mirin, bonito powder.

Pour the water until the marked water line (mixed 2).

Mix well and level the rice before adding other ingredients.

Place the tuna, carrot and shiitake on top of the rice.

NOTE: DO NOT mix other ingredients into the rice.

→ If you do, you'll likely have undercooked rice.

Close the rice cooker's lid.

Cook the rice at the regular white rice/mixed rice setting.

Once the rice is done, add snow peas.

Close the lid and let it heat through for 10 minutes.

Transfer to a large mixing bowl.

NOTE: If your rice cooker's big enough, mix in it!

Add peas and shio kombu.

Use a rice paddle to gently stir and combine.

Transfer the mixed rice into a rice cooker.

Keep it warm until served.

Use tuna can's water to enhance the umami in the broth.
