材料

3-4 servings
  1. for the wings:
  2. chicken wings,  drumettes 2 lb
  3. (wingtips removed)
  4. baking powder 1/2 tablespoon
  5. kosher salt 1/2 teaspoon
  6. granulated garlic 1/2 teaspoon
  7. freshly ground black pepper 1/2 teaspoon
  8. for the sauce:
  9. hot sauce 1/2 cup
  10. (like Frank’s/Crystal pt etc)
  11. unsalted butter (melted) 2 table spoons
  12. garlic powder 1/4 teaspoon
  13. light brown sugar 2 table spoons
  14. fine sea salt 1/8 teaspoon
  15. cayenne pepper to taste (optional)
  16. (Additional kick for grown up)

    Gather the ingredients.

    Set the oven rack to the upper-middle position.

  3. 3

    Preheat the oven to 425F.

  4. 4

    Set on a rack in a baking pan.

  5. 5

    NOTE: I set a parchment paper for an easy cleanup of the pan

    Pat dry the wings with a paper towel WELL.

  7. 7

    Place the wings in a large mixing bowl.

  8. 8

    Sprinkle over baking powder, salt, garlic and black pepper.

    Use your hands to toss well and coat with seasoning evenly.

    Place the wings skin side up on the rack in a single layer.

    Bake the wings for 20-25 minutes, and flip them over.

    Continue to bake for 15-20 mins or until crispy and browned.

    Transfer the wings onto a large heat resistant mixing bowl.

    Combine all the sauce ingredients in a small bowl.

    Pour the sauce over the wings and toss to coat evenly. Serve

    NOTE: This is the one I used for this recipe.

コツ・ポイント

Use baking powder to make the wings crispy without the original buffalo wings' preparation, which is deep frying.
