Creamy Sausage Pasta

Italian sausages are often made with ground pork along with traditional Italian herbs and spices like fennel, garlic, and red pepper flakes. I chose Italian chicken sausages for this recipe as a lighter alternative, but you can still have all the same flavor as the pork one :-)

Remove meat from the casing.

Oil in a large pot over medium high heat.

Add the sausage and break up the meat.

Cook, stirring occasionally until lightly browned.

Stir in garlic and cook until the garlic is fragrant.

Add wine and bring to a simmer. Cook for 2 minutes.

Heat to medium low and add heavy cream.

Bring to a gentle simmer and cook until the sauce thickens.

Season with salt and pepper to taste.

Meanwhile, bring water to a boil in a large pot, add pasta.

Reduce pasta cooking time by 1min so we FINISH it in the PAN

Add pasta and baby spinach, toss over medium high heat.

Serve with grated Parmigiano Reggiano over the pasta.

The salt for the pasta water is an essential seasoning for this sauce, so season lightly with salt at step 8.
