Avocado Drsg Slaw

In spring, loose-leafed cabbage is in the produce aisle. It's heart isn't solid like "proper" cabbage, and has a tender, sweeter flavor. I often make cabbage slaw, and for this recipe I used avocado oil and mayonnaise to make a light dish with a hint of creaminess, and paired it with champagne vinegar :-)

Combine all the dressing ingredients in a large mixing bowl.

Add cabbage, carrots, shallots and parsley.

Toss well and season with additional salt/vinegar as needed.

Let it sit in a fridge an hour before it's served.

Add thinly sliced shallots to this recipe to create a subtle sweetness and a hint of garlic flavor.
