Ingredients

  1. 3 tbspoil
  2. 1large red onion, halved, sliced
  3. 5eggs
  4. Salt to taste

Cooking Instructions

  1. 1

    In a shallow pan add oil and onions and fry on medium heat till softened. Add salt and stir.

    Add unbeaten eggs and stir continuously till well cooked.

  3. 3

    Add tomato slices at the top and cover on low heat for a minute.

  4. 4

    Used softened tomato over your buttered bread. Top up with eggs

  5. 5

    Or make tomato puree separately and serve alongside pan toasted sweet potatoes with the eggs.
