A whole ripe pineapple makes enough pineapple cubes for 6 large metal skewer meals, and the pineapple juice makes a quick marinade for a whole pork tenderloin. You then thicken the marinade to a glaze and drizzle over the kebabs while grilling to shorten the marinade time.Makes a great outdoor lunch or dinner for guests.Served over fried basmati rice.#CA2025 Hobby Horseman -

Pot roast with balsamic and mustard Pot roast with balsamic and mustard
This is a spin on a classic family dinner. The wine that's in a lot of pot roast recipes has been swapped for a really good, well-aged balsamic, and partnered with a hit of grainy mustard for zing. The end result is a tender roast with a rich and flavourful gravy, without the alcohol (if that's a concern for you). Robert Gonzal -
Cuban-Inspired Pork & Black Bean Stew (Stovetop & Slow Cooker) Cuban-Inspired Pork & Black Bean Stew (Stovetop & Slow Cooker)
I think one of the best ways to honor our heritage is through food. As my older kids are part Cuban, I like to include those flavors in our rotation as well.Like many stews, this is a good one to make ahead and freeze for those busy weeknights. If you're averse to pork, you can make this with slightly larger chunks of chicken.Very good arguments are made for and against searing the meat (Step 1) beforehand. I think the best argument for it is the resulting depth of flavor. The best argument against? Time saved. You can do what works best for you and your family on a given day and have a delicious result either way.I've included stovetop and slow cooker instructions below. x
