Note. : Spring roll wrappers can be used to make spring rolls, pockets & samosas. And over here, I have used them to make samosas.

When I go back home to Udon, there are so many places to buy these, and they're all delicious. My favorite shop is in the Ban Huai market—locals from Udon might know it—or you can also find them at Center Point Udon, which are just as tasty. I found this recipe that adapts the traditional fresh rice sheets by using ready-made Vietnamese spring roll wrappers instead, and it turned out great! Next time I go home for Songkran, I'll get the soft, fresh kind again, but for now, this homemade version really hits the spot. Nem rán (Vietnamese Fried Spring Rolls) Nem rán (Vietnamese Fried Spring Rolls)
With the Lunar New Year approaching, many of us love preparing a festive meal for our families. Although I'm from Central Vietnam, my mother-in-law is from the North, so I learned how to make authentic Northern-style nem rán from her. In our home, a plate of crispy, delicious nem rán is always part of the New Year's feast. This beloved dish features a golden, crunchy wrapper filled with pork, wood ear mushrooms, eggs, and a mix of vegetables. I usually serve it with a basket of fresh herbs, some pickled vegetables, and a sweet and tangy dipping sauce, just like people do in Central Vietnam. Nem rán has become a traditional dish not only in the North but all across Vietnam, with only slight differences in preparation and name. Bếp của QuỳnhTranslated from Cookpad Vietnam -

Singhara or Samosa Recipe Singhara or Samosa Recipe
Samosas... Who doesn't love them? Samosas are made everywhere, but the taste varies. Similarly, Bihari Singhara is full of flavor, and honestly, the taste of Bihari Singhara/Samosa is unmatched. The samosas here are also smaller in size. In Bihar, children and adults often enjoy Singhara with tea. Whether it's a market, school, college, kids' birthday party, office party, or kitty party, having Singhara is essential. Singhara and Balushahi parties are also common. This is a savory snack that is very popular among Biharis. Let's see how to make Singhara in the Bihari style. Madhvi SrivastavaTranslated from Cookpad India -

Mishti Singara: Sweet Samosas Stuffed with Kheer and Khoya Mishti Singara: Sweet Samosas Stuffed with Kheer and Khoya
While traditional samosa or singara (that's what we Bengalis call it) are filled with a spicy potato filling, this one comes with a sweet filling made of reduced milk, milk solids and semolina, laced in sticky sugar syrup. The filling can also be made of chhana or cottage cheese, but I like the kheer version more. The given proportion yields around 40 small samosas or 30 large ones.See more on my blog post here: http://www.allthatsdelicious.com/mishti-singara-recipe Lets Talk Food -
