Anyone in the know - knows that every Wednesday here in the O'Brien Shire is, "Let's clean out the crispers, freezers and rotate the pantry day!" With that, two of my youngest students created this delectable NOLA inspired dish in less than 15 minutes. Excellent work kiddos! Great shortcuts too! MMOBRIEN -

A certain amount of fat has to be in our diets daily. Transfat is not good but it's only produced when vegetable oils hardens it's called hydrogenation. Hydrogenated fats, or "trans fats," are often used to keep some foods fresh for a long time.Trans fats are also used for cooking in some restaurants. They can raise LDL cholesterol levels in your blood. They can also lower your HDL (good) cholesterol levels.Animal fats like drippings and lard doesn't this. They help absorb vitamins A, D, E, and K. The fats your body gets from your food give your body essential fatty acids called linoleic and linolenic acid. They are called "essential" because your body cannot make them itself, or work without them. Your body needs them for brain development, controlling inflammation, and blood clotting. This information came from the U.S. National Library of Medicine. This is why I try and use vegetable oil as little as possible. The only oils I like to really use is olive, coconut, peanut and lard. The price and affordability is the only reason I use vegetable oil. I absolutely will not use canola oil as it does indeed cause heart lesions over a period of years of use. skunkmonkey101 -
Rice Dressing—Dirty Rice an ancient, authentic, Cajun recipe from Richard (ree-shard) Louisiana Rice Dressing—Dirty Rice an ancient, authentic, Cajun recipe from Richard (ree-shard) Louisiana
Well friends, here it is. I’d never eaten cornbread dressing while growing up. Didn’t even know what it was. This is the dressing I’ve eaten at the holidays my entire life. My mom would make it every year and the smell of it in the house was a sure sign I was about to have rice dressing. We only got it at thanksgiving and Christmas. Why we never had it any other time of the year, I don’t know. It kept it special♥️ easiest recipe ever. I wonder sometimes if this is what people are calling dirty rice. Either way, it’s unctuous. Portuguese Rice Portuguese Rice
Every summer, my parents would take all of us up to Cape Cod for a few weeks. I love the food up there. Between all of the different fresh fish and the great Portuguese dishes, I am in heaven. One of my favorite places to eat is John's Foot Long in Provincetown.I am allergic to shellfish so I have never had it, but I heard that their lobster roll is one of the best. Judging by all of their other dishes, I would not doubt that. My favorite dish of theirs is their Portuguese Rice. I have been trying to find a similar recipe to theirs, but it is impossible. Along the way, I have combined a few recipes that I have found and came up with one that I like a lot.It is nothing similar to John's in taste, but it is still very, very good. Definitely worth the try. #mycookbookEnjoy! J.A.B.
