Ingredients

  1. 4Roma Tomatoes
  2. 1 largeRed Onion
  3. 1 tbspLime Zest
  4. 1 1/2 cupCilantro
  5. 1 tbspGround Cumin
  6. 3 tbspLime Juice
  7. 1 1/2 tspKosher Salt
  8. 1 1/4 cupExtra Virgin Olive Oil
  9. 1 largeCan of Black Beans, Drained

Cooking Instructions

    Drain and set aside the black beans. Chop red onions, tomatoes, and cilantro into small pieces.

    In a blender add the zest of the lime, juice of the lime, cumin, salt, and olive oil, blend for approximately 2 minutes.

  3. 3

    Now combine black beans, tomatoes, onions, and cilantro all together mixing in the mixture from the blender. Let salsa stand 20 minutes then serve with tortilla chips.
