Mae's Raspberry Pecan Muffins

Cooking Instructions

preheat oven to 400° F
- 2
mix flour, baking powder, sugar, and salt in large bowl
- 3
combine egg, oil, and milk in small bowl
- 4
stir until just moistened thoroughly
- 5
mixture will be lumpy
- 6
fold in raspberries, pecans, lemon peel
- 7
line muffin pan with liners
- 8
fill 2/3 full
- 9
bake at 400° F for 20 to 25 minutes or until golden
- 10
serve warm
- 11

Since then I've been hooked on sweets with dried fruit.I made these muffins with typical ingredients I have at home.At Step 1, if you forget to return the butter to room temperature heat it in a microwave for 10 to 20 seconds.
