Just experimenting turned out good. You can roast the peppers empty and cleaned for a more softer cooked pepper. About 15 minutes and let cool before stuffing them.

Just experimenting turned out good. You can roast the peppers empty and cleaned for a more softer cooked pepper. About 15 minutes and let cool before stuffing them.

Ingredients

5-10 servings
  1. 5 linksspicy Italian sausage
  2. 5large bell pepper I used red ones
  3. 1 cupplain Greek yogurt
  4. 46 ounceyour favorite spaghetti sauce
  5. 5large eggs
  6. 1/2 teaspoonsalt
  7. 1/2 cupgrated parmesan cheese
  8. 1/2 cupshredded cheddar cheese

Cooking Instructions

    Preheat oven 400 degrees Fahrenheit

  2. 2

    Carefully cut the top off the peppers and carefully remove stems from the tops

  3. 3

    Remove the casings from the sausage

  4. 4

    Remove seeds and excessive ribbing from the peppers. Salt the insides of peppers.

  5. 5

    Mix the parmesan cheese, yogurt, and sausage.

  6. 6

    Fill the peppers with the sausage mixture leaving a hole in the center.

    Add an egg to each center careful not to break the yokes

  8. 8

    Add the rest of the sausage mixture to tops of the stuffed Peppers

  9. 9

    Add cheese

    Add the tops of the peppers.

    Add spaghetti sauce to the pan

    Put into oven for 1 hour to 1 hour and 15 minutes. For an hour you ge runny yokes for an hour and 15 minutes you get hard cooked eggs.

    Serve with rice I hope you enjoy!

    You can cut into half from top to bottom and have 10 of them or serve whole for 5.
