Kayan aiki

  1. 2ripe plantains
  2. 2 cupsminced beef
  3. 1medium size onion
  4. 1green pepper
  5. 1red pepper
  6. 1 tbspn chilli powder
  7. to tasteSeasoning
  8. to tasteSalt
  9. Oil
  10. 1/2 tspn curry

    The ingredients needed

    Slice open the ripe plantain and cut into any desired shape. I made mine round. Add salt to taste and toss to mix averything together

    Pre heat the cookinh3 oil on medium heat and add the plantain. Fry till golden brown.

    Remove the oil from the pan completely and add the greased pan back. Add half of the chopped onion and stir fry for 30 seconds. Add the beef, chilli powder, curry, seasoning and salt to taste. Let it cook for about 15 mins.

    Get everything ready

    In an empty bowl, combine the eggs, veggies, plantai, half of the beef, chilli powder and seasoning to taste.

    Mix everything together

    Pour into the greased empty pan.

    Top with the rest of the minced beef.

    Cover the pan and leave to cook on very low heat for about 10-15 mins or till the buttom is set but the top is still runny.

    Now, your plantain frittata is ready.
