Cooking Instructions

Cut,wash and cook the chicken with onions, garlic, seasoning,salt and spices until soft (do not over cook the chicken).

Drain the chicken and keep aside.

Wash the red bell pepper,scotch bonnet and onions,blend them together and keep aside.

Place the frying pan on fire,pour to the veg. oil and fry the chicken,remove from oil and set aside.

Saute the onions,ginger nd garlic paste,pour in the blended pepper and fry.Add the spices, seasoning and salt,pour the fried Chicken and keep stirring until the pepper is well combined with the chicken.

Allow it to cook for few minutes and off the flame.

This peppered chicken is very delicious. The chicken, infused in the sauce, makes a very tasty and appealing meal. The aroma of the sauce in it's self is very inviting.*TIPS:1. If you are in a hurry or feeling too lazy to rigorously stir and combine all ingredients, simply add seasoning and spices first before adding water. The water will settle the ingredients and all you have to do is give it a little stir. This is especially useful if the water you are adding will not cover the ingredients and you are using large quantity of ingredients.2. Do not overcrowd chicken when frying so as to get even colour on all pieces.3. Do not overcook vegetables in sauce because:A. You are going to cook it further when you add fried chicken.B. You are stir frying it. When you overcook stir fried food, it becomes mushy and unattractive.4. It is important to combine the chicken and sauce in the pan on low heat. This is because the sauce is made up of cut vegetables, not grinded ones. The stir frying and steaming with the pan lid closed allows the juices of the sauce to infuse into the chicken.#IAMACTIVE
