    Wash the chicken well. In a pot, pour water and add the chicken, salt, onions, ginger, cinnamon. Let it boil until it's cooked.

    Deep fry in a hot oil until it's golden brown. Drain and set aside.

    In a pan, add oil and chopped onions, caramelise. Add scotch bonnet, seasonings, black pepper, curry then stir fry. Add in the fried chicken and stir fry. Serve when it's done.
