My best friend once gave me a pack of li hing mui. She advised me to soak them in roasted tea, then add some sugar, then some ice. I thought li hing mui would taste divine with orange juice, and I was right. During hot days, my family and I enjoy this drink with heaps of ice.

Not only a very refreshing drink, it also combines two very wholesome ingredients... carrot which are rich in beta carotene and vitamin A... and orange juice which contains vitamin C, a powerful antioxidant! :positive :ohyeaah

My father-in-law grows a lot of sweet potatoes.I generally stew them with the lemons that my father-in-law also grows, but I came up with this recipe after stewing them with some marmalade I had received. These are great as side dishes or little items to pack in lunches.I also recommend trying them as imo amanatto (candied sweet potatoes).Be careful not to overcook the sweet potatoes. You can also substitute marmalade for the orange juice.These also be transformed into imo amanatto, (candied sweet potatoes) by drying them and coating them in granulated sugar.Adjust the sweetness to taste. I like the texture of thickened agar better than gelatin. This recipe is based off many testings.If agar isn't boiled, it won't harden so make sure to boil it!If for some reason it doesn't harden when chilled, transfer it back to the pot and boil again.If you boil gelatin, it is harder to thicken, so when using gelatin, follow Step 9.
