  1. FOR SAMBAR POWDER:
  2. 1 tspcoconut oil
  3. 1/2 tspmethi / fenugreek
  4. 1 tbspcumin / jeera
  5. 1 tspurad dal
  6. 1 tspchana dal
  7. 20dried red chilli
  8. 1 tsphing / asafoetida
  9. FOR SAMBAR:
  10. 2 tspoil
  11. 1/4 tspmethi / fenugreek
  12. leavesfew curry
  13. 1tomato, chopped
  14. 1potato, cubed
  15. 1/2brinjal / baingan, cubed
  16. 1 cupwater
  17. 1 cuptoor dal, boiled
  18. 2 tbspcoriander, finely chopped

Cooking Instructions

    Firstly, in a large kadai heat, 2 tsp oil and splutter tempering.

    Add 4 shallots, 2 chilli and saute for a minute till it changes colour.

    Further, add 1 tomato and continue to cook.

  4. 4

    Now add mixed vegetables and saute for 2 minutes.

  5. 5

    Further, add ¼ tsp turmeric, ½ tsp jaggery, 1 tsp salt and 1 cup water.

    Mix well, cover and boil for 10 minutes.

    Now add ¾ cup tamarind extract and mix well

  8. 8

    Cover and boil for 10 minutes.

    Additionally, add 1 cup toor dal, water and mix well.

    Add in 4 tsp of prepared sambar powder.

    Boil for a minute, until the flavours are well absorbed

    Add in 2 tbsp coriander leaves and mix well.

    Finally, enjoy idli sambar with hot steamed idli.
