My mum loves salads, recently I make her salads every other day for breakfast and she said this one was exceptionally good so I decided to share the recipe.

Ingredients

No cook time
3 - 4 people
  1. 1medium or large ripe avocado (depending on how much you like)
  2. 2-3hard boiled eggs
  3. 3and 1/2 bunches of lettuce (medium sized)
  4. 1/2of a small cabbage
  5. 1medium onion
  6. 1medium bell pepper (colour of choice)
  7. 1small cucumber
  8. 2medium sized tomatoes
  9. 2large canned sardines
  10. 1large carrot
  11. 1medium garlic clove
  12. 4 tbspolive oil or vegetable oil
  13. 1small lemon
  14. to tasteSalt,

    Wash all the vegetables and avocado in salted water.

    Next, peel and remove the seed of the avocado and cut into cubes. Also, finely dice the garlic, shred the cabbage, cube the hard boiled egg, tear up the lettuce leaves, cut up the onions, bell pepper and tomatoes into desired shapes and sizes. Peel and seed the cucumber and cube it. Grate the carrot as well. With a fork, mash up the sardines to finish and pour all of these into a large mixing bowl starting with the lettuce.

    To finish, drizzle over the oil and lemon juice and salt to taste. Mix thoroughly till everything is well combined and all the vegetables are coated. Enjoy as is or pour over some salad cream or vinigrette. (If the vinigrette is sour, leave out the lemon juice.)
