I thought what do I want out of this dish. I wanted it to have a slight smokey flavor like a good baked potato cooked on the grill would. I wanted the cheese to be creamy like it gets when the cheese mixes with the sour cream on a freshly cut baked potato. I wanted the chicken to complement it but not taste entirely the same. When I finally served this up the family all agreed this was a keeper. My wife is convinced this is the ultimate comfort food. Hope you enjoy.
