We have eaten squash casserole since I was born. Usually I use bacon. This time I used ham.
Cooking Instructions
- 1
Dice the ham add to a pot and cook. Let the fat render a bit.
- 2
Slice the squash. Add to the ham. Add salt and cover. Cook 10 minutes. Stir and add the water.
- 3
Cook the squash till render and falling apart. Allow to cool 30 minutes.
- 4
Take the crackers and crush. Add the liquids of the squash, along with the squash and ham. Add the butter and mix well.
- 5
Mix in the cheese. Add to a dish to bake in. Shake it to get even. Add cheese and breadcrumbs on top and put into oven for 45 minutes, till topping is cooked, and casserole is bubbly.

Let rest 12 minutes before serving. I hope you enjoy!!!

While at work one day a traveling produce man came in with a large amount of squash. Not being very familiar with cooking squash personally, I was challenged to make a dish using it. Potatoe and Squash Casserole
I wanted to add more vegetables to my diet. So I thought of making a vegetable casserole for a dinner. I wanted the casserole to have three components: vegetables, a sauce, and a topping. After some research I came up with this recipe. I thought the flavoring of the potato and zucchini and squash would go really good together. It's also flexible. You can add to or change the squash to another vegetable. I've added broccoli.I hope you enjoy it as much as my family did. My family even had seconds on this so it was a great success. Bon Appétit!
