Actually a spinoff of an omelet with corned beef and hash without cheese i had once. Came home and made it my own and it's really good.

Ingredients

20-30 mins
1 serving
  1. 4eggs
  2. Tomatos
  3. Garlic
  4. Onion powder
  5. salt and pepper
  6. paprika
  7. Halfcan of libbys corned beef hash
  8. Texas Petes Hot Sauce
  9. Pepper Jack(or your cheese of choice)

Cooking Instructions

20-30 mins
  1. 1

    Put corned beef hash in a pan and cook on medium-high
    -Mix in garlic powder, onion powder and Texas Petes Hot sauce(quantities to your liking)
    Let corn beef hash brown a bit

    Mix 4 eggs in a bowl
    - Adds spices(garlic, onion powder, salt/pepper, paprika)
    - Dice up a little tomato and mix into the mixture

    Cook omelet in frying pan
    -I usually will flip the omelet half way through cooking

    Once flipped, add 3-4 slices of Pepper Jack(or w/e cheese you like)

    Add some of the corned beef hash you cooked up on top of the cheese as a filling. How much you use as the filling is up to you.

    After letting the other side of the omlet cook for a bit, fold omelet in half and let cook for a few minutes or until cheese is melted

  7. 7

    Now just Plate it, grab some toast and condiments of choice and enjoy!
