Perfect comfort food! The meat and/or potatoes can be diced or shredded.

I tend to look for this on good breakfast menus when I know it’s not prepared from a can. There’s just no substitute for the real - deal. After a traditional "Irish" meal of corned beef, I use the leftovers (see my recipe) for the next day's breakfast (or dinner). Traditionally it's topped with an egg either poached or fried.

I always cook extra corned beef on st Patrick's day because this is my favorite breakfast. Quick and easy.

Cover shredded potatoes with cold water to prevent oxidation if not being used immediately.

Actually a spinoff of an omelet with corned beef and hash without cheese i had once. Came home and made it my own and it's really good.

Start of Christmas day meal

This is a copy cat recipe from a modern Filipino resto. Perfect during lockdown, having the ingredients in the cupboard. Fresh corned beef is only available in artisan stores here and a bit expensive too, so most of us use canned in the Ph. There are good and tasty brands in the supermarket now, my fave is Delimondo.This is great for cold nights/days. Here we eat Nilaga all year round, on hot and hotter days LOL.

I am on a low carb diet so traditional corn beef hash has potatoes. I substituted them for cauliflower. Hope you enjoy!

I only cook a formal meal once or twice a week, so I always have leftovers. This is just one of many easy ways to use up leftover roast.

This recipe is for a 3-pound roast. Adjust to any size and cook 40 to 50 minutes per pound.
