Ingredients

  1. 3 tablespoonsPanang curry paste
  2. 1.1 poundspork (about 500 grams)
  3. 1 cancoconut milk (13.5 fl oz or 400 ml)
  4. Sliced kaffir lime leaves, to taste
  5. Sliced red chili peppers
  6. 1 tablespoonpalm sugar
  7. 1 tablespoonfish sauce

Cooking Instructions

    Slice the pork thinly and marinate with 1 tablespoon fish sauce for 30 minutes.

    Simmer the pork with half of the coconut milk over medium heat for about 20 minutes, until the coconut milk is reduced by half.

    Stir-fry the curry paste with the remaining coconut milk until fragrant and the oil separates.

    Add the pork to the pan and stir-fry. Add 1 tablespoon fish sauce and 1 tablespoon palm sugar.
