  2. 2large onions
  3. 8-10 clovesgarlic

  5. 2-inch piece of ginger

  9. 2black cardamom pods
  10. 2 tablespoonsmustard oil
  11. 2 teaspoonssalt
  12. 1 teaspoonmeat masala
  13. 1/4 teaspoonturmeric powder
  14. 1 teaspoonred chili powder
  15. 1 teaspooncoriander powder
  16. 1 1/2 teaspoonsgaram masala

    Clean the mutton thoroughly and wash it. Finely grind the onions, garlic, and ginger.

    Place a pressure cooker on the stove and add oil. Heat it well. Once the oil is hot, add the whole spices and sauté. Now add the ground onion, garlic, and ginger paste.

    Sauté the paste for 5 to 10 minutes until it turns golden. Then add salt, turmeric, coriander powder, red chili powder, and meat masala.

    Sauté the spices well until the oil starts to separate. Now add the mutton pieces and mix well. Add water as needed.

    Close the pressure cooker lid and cook on high heat for 3 whistles. Release the pressure, reduce the heat, and let it cook on low heat for about half an hour. The mutton is ready. Add garam masala and garnish with cilantro. Serve with bread or rice.
