Ingredients

  1. 2 mediumSweet potatoes
  2. 30 gramsButter
  3. 60 gramsSugar
  4. 2 tbspMilk
  5. 1 dashSalt
  6. 1Egg yolk
  7. 1 tbspRum (if available)
  8. 1Egg yolk for glazing

Cooking Instructions

    Peel the sweet potatoes. Soak in water to remove any scum.

  2. 2

    Drain the sweet potatoes and microwave for 10 minutes to soften. Poke with a bamboo skewer to see if it goes through easily. (The other alternative would be to boil them.)

    Mash the sweet potatoes finely while still hot. (To make it even smoother, pass it through a strainer.)

    Melt the butter in a pan. Add the mashed sweet potatoes, sugar, milk, and salt. Stir over low heat.

    When the excess moisture evaporates from the sweet potatoes and the batter thickens, transfer the pan onto a damp cloth. Let cool. Add egg yolk and rum and mix some more.

    When done, shape to your liking. Brush on the egg yolk to glaze. Top with black sesame seeds and bake in a toaster oven for 10 minutes.

    When using a regular oven, preheat to 180℃ and bake for 10 minutes.
