Flounder Soup

I ordered some flounder cutoffs online, so I tried my hand at making this. This is a dish that makes me glad that I'm Japanese.
You can use any cutoffs you like, not just flounder. Recipe by ochikeron
Cooking Instructions

Wash the flounder cutoffs and wipe away any excess moisture. Coat with the sake and salt and set aside. Re-hydrate the wakame seaweed.

Bring the dashi stock to a boil in a pot. Add the soy sauce and a pinch of salt to flavor.

Add the flounder cutoffs and lightly simmer. Remove any scum. Taste, and if you find it's not salty enough add more salt.

Put the cooked cutoffs and wakame in a bowl. Pour in the soup from Step 1, and top with mitsuba and it's ready.

A friend of me sent me some dried scallops, and I wanted to turn them into something tasty. My city is getting colder at night (for our standard, that is. I live in the biggest archipelago in the world) so I wanted to make something warm. This dish is very simple and tasty. Adjust the salt to your liking. You might want to add more, but I think a pinch is enough.

Shorty's Fish Soup
Fish soup is a nice spicy Cajun soup that can be eaten as is or over rice. This receipe has been modified for people with irritable bowel syndrome (IBS). It is low FODMAP having onion and garlic replaced with other spices. Note, if you don't have IBS follow directions using garlic. The Asafetida Ground is an Indian spice used to replace garlic. It's hard to find, but you can get it on Amazon.com :)
