Bacon Wrapped Scallops

Hang on, don’t judge me yet. For the record, I don’t like to follow trends... I am not a fan of wrapping everything in bacon and I am also not a fan of smearing everything with avocado. I actually made this for someone’s special occasion and I had a little bit left over. With all of that being said... I still secretly enjoyed this hahaha!

Ingredients

  1. 1 LbSea Scallops
  2. 7 SlicesBacon
  3. 2 ClovesGarlic
  4. 3 Tbs.Butter
  5. Black Pepper
  6. 1 1/2 Tsp.Salt

Cooking Instructions

    Sprinkle salt on the scallops and cover with paper towel. Allow it to rest while HALF WAY cooking bacon. Remove bacon from pan and allow to drain. Also, drain bacon fat but do not worry about wiping it clean. Leave any residual fat in the pan.

    Cut bacon in half. Season scallops and begin to wrap with bacon. Secure the bacon with toothpicks. Take your time and be patient as the scallops are delicate and it can be an irritating process.

    Mince garlic. Add butter to pan and melt. I recommend using a heavy pan, like cast iron. Heat it throughly and add in garlic. Place scallops in. When the bacon is cooked, the scallops are done. **Baste the scallops with the butter and garlic while cooking** Allow to drain on a rack over paper towels.

    Serve on a bed of greens with a lemon wedge.
