Ingredients

About 40 cookies
  1. 50 gbutter (about 3 1/2 tablespoons)
  2. 50 gpowdered sugar or granulated sugar (about 1/4 cup)
  3. 1egg yolk
  4. 30 galmond flour (about 1/4 cup)
  5. 100 gall-purpose flour (about 3/4 cup)
  6. 30 gchocolate chips (about 1/4 cup)

Cooking Instructions

  1. 1

Mix the butter and sugar in a bowl, then add the egg yolk and mix well.

  2. 2

Add the almond flour and mix.

  3. 3

Sift in the all-purpose flour and mix gently with a spatula, being careful not to knead. It's okay if some flour remains visible.

  4. 4

Add the chocolate chips and mix. The dough is now ready.

  5. 5

Divide the dough in half, place on plastic wrap, shape into round logs, and freeze overnight. I also made a cocoa dough this time.

  6. 6

Transfer the frozen dough to the refrigerator and thaw for 2-3 hours. Slice into pieces about 1/4 inch thick.

  7. 7

Place on a baking sheet and bake in a preheated oven at 340°F (170°C) for about 16 minutes.

  8. 8

Done! Here's a photo of a previous batch.

  9. 9

    Note added on 2020/2/13
After freezing, let the dough thaw slightly in the refrigerator before slicing.

  10. 10

I slice the dough when it's semi-thawed. It's easiest to cut when the chocolate and dough are about the same firmness.
