Creamy Egg on Tofu Soboro A Healthy Breakfast

I was trying to think of a balanced, nutritious breakfast good for my family's health and came up with a soboro-style tofu jako dish.
I added the egg whites when heating it in the microwave because my family prefers to mix the raw egg yolk themselves.
You don't need to drain the tofu before heating it. However, after heating it once drain the tofu well and then add the seasoning.
Use only egg whites when heating the dish in the microwave and save the egg yolk. Mix with the dish later. Recipe by Satomiwa

Cooking Instructions

Place the tofu into a heatproof bowl and microwave for 1 minute at 600 W microwave. Drain the water.

Once you drain excess water, add the chirimen jako and microwave for 1 minute again at 600 W.

Next, add the egg white and shiro-dashi and mix well. Crumble the tofu (the egg yolk will be added later).

Cover with plastic wrap and microwave for 1 minute at 600 W. While heating, serve rice onto a plate and line with lettuce leaves if you prefer.

Place the heated tofu soboro on the rice and sprinkle with toasted sesame seeds. Drop the egg yolk in the middle and it's finished. Mix the egg yolk and consume.
