Preheat oven to 325F.

In large bowl combine butter, eggs, sugar, and flour until uniformly mixed. Press dough onto oiled baking tray to mould crust. Perforate with fork and bake for approximately 15 mins until slightly golden brown. Cool and set aside.

In a bowl mix lemon juice, sugar, lemon zest, egg, and flour. Set aside.

In another bowl, mix raspberry preserve, sugar, water, flour, and egg. Set aside.

Pour lemon mixture on top of pastry crust. Lightly layer on raspberry mixture.

Bake uncovered until crust is golden and layers are set for approximately 25 mins. Chill thoroughly in refrigerator. Cut into desired pieces.

#heirloomI grew up drinking lemongrass tea a lot because we had soo many lemongrass plants around the house and it was one of my favourite things to drink in the morning. They have an amazing smell and flavour and they go so well with lemon. That is where the idea of this recipe came from.You can make lemongrass tea by putting a bunch of fresh lemongrass in boiling water for 10 minutes until the water changes in colour, smell and flavour.

This Blueberry dessert is a tribute to my Mother. Every summer as kids my Mom would take us blueberry picking, not at farms but just in the woods around our house where wild Maine Blueberry bushes were loaded with small intense flavored wonderful berries. She made these cheesecake bars and called it just Blueberry dessert. She never wrote a recipe for it but I saw it made so often that this is my best try at re creating it. I don't have access to the wild New England blueberries now but it is delicious with any fresh blueberries.
