  1. Crust
  2. 1/2 cupMargarine or Butter (softened)
  3. 1 cupAll-Purpose Flour
  4. 1/4 cupPowdered Sugar
  5. 1 tbspVanilla Extract
  6. Lemon Mix
  7. 1 cupGranulated Sugar
  8. 2 tspLemon Peel (Optional)
  9. 2 tbspLemon Juice
  10. 1/2 tspBaking Powder
  11. 1/4 tspSalt
  12. 2Eggs

Cooking Instructions

    Preheat oven to 350

    Mix flour, margarine, powdered sugar and vanilla extract thoroughly in a small bowl.

    In an ungreased 8x8x2 pan, press the dough evenly with hands (If dough is sticky, flour fingers).

    Bake for 20 minutes.

    Beat the lemon mixture ingredients in a medium bowl on medium speed until light and fluffy.

    When crust is done, pour lemon mixture onto the hot crust.

  7. 7

    Bake for 25 minutes (or until there is no indentation when touched lightly in the center).

    Sprinkle the top with powdered sugar (optional)

    Let stand until cool. Cut into 1 1/2 inch squares.

I tried these lemon bars and their delicious! They didn't stay long in my house, everyone ate them right up.
