I think it is better not to overcook the Chinese chive. Adjust the cooking time to your liking. Recipe by putimiko

Ingredients

2 servings
  1. 2Eggs
  2. 50 gramsThinly sliced pork belly
  3. 1/2 bunchChinese chives
  4. 1 tspMentsuyu (x3 concentrate)
  5. 2 tspWater
  6. 1 pinchChicken soup stock granules
  7. 1Vegetable oil, salt and pepper
  8. 1Ichimi spice, sesame seeds

Cooking Instructions

  1. 1

Cut the pork into bite sized pieces and chop the Chinese chive into 3-4 cm. Beat the eggs and mix the chicken stock.

  2. 2

Heat the pan with oil and saute the pork. Lightly season with salt and pepper and add the Chinese chive. Turn up the heat to high and pour in the eggs.

  3. 3

Scramble with chopsticks and spread out the egg mixture evenly on the pan. Turn heat to low and continue cooking the egg mixture to your desired firmness. I like semi-cooked eggs.

  4. 4

Serve on a plate. Drizzle a mixture of mentsuyu and water on top of the egg. Season with sesame seeds and ichimi spice as you like.
