Cucumber with Garlic Dressing

I tried to recreate a side dish that I ate in a Benitora gyoza dumpling restaurant.

I changed the tool for pounding from a knife to a rolling pin (users were rightly saying that it's dangerous!). I used a small rolling pin that I would normally use to roll out gyoza dumpling wrappers. Recipe by Setsubunhijiki

Ingredients

2 servings
  1. 2Cucumbers
  2. 1 smallclove Garlic
  3. 1/2 tspSalt
  4. 1 tbspSesame oil

Cooking Instructions

    Pound the cucumber with a rolling pin (as if you are trying to crack it from end to end) and break up into bite-sized pieces with your hands.

    Crush the garlic with a rolling pin. Place the rolling pin on top of the garlic, press down, and chop into small pieces.

  3. 3

    Add the cucumber to a bowl, sprinkle over some salt and give a quick toss. Leave for a while until the moisture leaks out of the cucumber pieces, tip the bowl to one side and discard the liquid.

    Add the garlic to the sesame oil and mix everything together. Chill well in the fridge, then serve.
