Cucumber Spirals with Spicy Peanut Dressing

I had a cucumber salad just like this (or at least I tried!) at a local Thai restaurant. I tried to recreate the flavor but used pb2 powder to cut back on calories. I'm very happy with the results!! Add diced cooked chicken to make it a meal.

Ingredients

  1. 1seedless cucumber run through a spiralizer
  2. 4 tbspPb2 (peanut butter powder)
  3. 3 tbspwater
  4. 2 tbsplow sodium soy sauce
  5. 2 tbsprice wine vinegar
  6. 1 tsptoasted sesame oil
  7. 2 tsphoney
  8. 1 tspchopped garlic
  9. 1 tspred pepper flakes (or less if you prefer less spicy)
  10. 1/2 tspground ginger
  11. 1splenda packet
  12. 3 tbspchopped peanuts (optional) I omitted to cut back on calor

Cooking Instructions

    Add cucumbers to a bowl. Mix PB2 with water(it will be thick) then whisk in all remaining ingredients.

    Pour over cucumbers and allow to chill in refrigerator for at least one hour before serving.
