I had a cucumber salad just like this (or at least I tried!) at a local Thai restaurant. I tried to recreate the flavor but used pb2 powder to cut back on calories. I'm very happy with the results!! Add diced cooked chicken to make it a meal.

Add cucumbers to a bowl. Mix PB2 with water(it will be thick) then whisk in all remaining ingredients.

Pour over cucumbers and allow to chill in refrigerator for at least one hour before serving.
