Ingredients

  1. 3whole pears,
  2. 1star-anise
  3. 1cinnamon stick
  4. 550 mlred wine
  5. 1/2 cupbrown sugar
  6. Halfan orange, juiced
  7. Halfa lemon, juiced
  8. 1orange peel
  9. Grated lemon jest
  10. 4 piecessaffron

Cooking Instructions

    Peel the pears, carefully take out the core from the bottom

  2. 2

    Pour the red wine, orange juice, lemon juice, sugar into a pan, put in all the herbs and stir well.
    Bring to a simmer.

    Put the pears in to the pan, make sure they are covered in wine.
    Put on the lid and let it simmer for 30 minutes.
    Turn the pears often to make the colour even.

    Take the pears out and put on a tray.
    Put the tray in the fridge for 20 minutes.

    Put the wine liquid on stove again, turn on medium heat and let it reduce to about 1/4.
    It should be glazie and shinie when done right.
    Turn the heat off and let it rest for 20mins.

    Take the pears out and place on a dish.
    Put some mascarpone or whipped cream on the side.
    Pour the wine mixture over the pears, grate some lemon zest on and serve.

I'll have to try your recipe. I've always used port wine to make this dessert
