One-Pot Simple Custard Cream

A standard custard I've been making for a long time.
It's very creamy.

You pretty much just mix it, but after removing from the heat please occasionally mix as well. If it becomes lumpy just mix and it'll be fine. If using vanilla extract add at the same time as the brandy. Recipe by youliebe. (Yields enough cream for about 10 cream puffs. Double the amounts for 20 cream puffs)

Ingredients

10 servings
  1. 1 tbsp■Cake flour
  2. 1 1/2 tbsp■Cornstarch
  3. 60 grams●Sugar
  4. 300 grams●Milk
  5. 2●L size eggs
  6. 15 grams●Butter
  7. 1/4Vanilla bean stalk (extract is also OK)
  8. 1/2 tbspBrandy

Cooking Instructions

    Add the ■ cake flour and cornstarch to a pot and heat. Use a whisk to mix in a circular motion (about 20 seconds).

    Add all of the ● ingredients to the pot and mix until the sides of the pot begin to bubble.

  3. 3

    If it looks like this remove from the heat, allow to cool, then add the brandy and it's complete. Please be sure to cool in the refrigerator.

    In the pictures, I used double the ingredients for 20.
