Pounded Cucumber Sprinkled with Sesame Salt

Pen Pen (my 4-year-old) says that cucumbers are too tough to chew... hard to relate for us adults. So, I attempted to recreate a pounded cucumber recipe that I tried once at a Japanese pub! For kids, I omit the garlic and ginger. I had Pen Pen pound the cucumber with a rolling pin. The cucumbers had a different texture that was apparently refreshing.

When serving to adults, I recommend 1/2 a clove grated garlic and a touch of grated ginger...

Ingredients

1 serving
  1. 1Cucumber
  2. 1/2 tsp*Salt
  3. 1 tsp*Sesame oil
  4. 1/2 tspVinegar
  5. 1 tbspGround sesame seeds
  6. 1/2 cloveFinely grated garlic (for adults)
  7. 1Finely grated ginger (for adults)

Cooking Instructions

    Sprinkle salt on the cucumber and roll on a cutting board, then let sit for 5 minutes.

    Put sesame seeds in heat-proof dish and microwave at 500 W for 1 minute, releasing the sesame aroma.

    Wash salt off the cucumber. Pound cucumber with rolling pin, starting with the ends! In our home, the kids do the pounding. Great for releasing stress!

    If you don't have a rolling pin, use a bottle.

    It will look like this.

    Slice diagonally into 1 cm.

    Combine the * ingredients with the ground sesame seeds. Mix together with cucumber slices. Best when chilled in fridge for 1 hour or more.
