I was feeling really bored when I saw some ripe bananas in my room. I had no second thoughts and got ready to make some yummy pancakes

The first food I've ever made myself was either fried eggs or pancakes. And from then on, I've tried TONS of different pancake recipes. I always end up feeling gross after eating a lot of pancakes but these are extremely light, with a bit of a bite to the exterior. LOVE IT.Decided to post it here because they use grams and I convert on the spot every single time, so might as well do it once and save it.

Adding tofu to you pancakes makes them fluffy even without eggs. (The texture will be slightly difference) You can make them with or without eggs, with wheat flour or with rice flour and buckwheat flour if you want to it to be gluten free. Do not over-mix if are using wheat flour to prevent it from developing too much gluten.
