A northern Nigerian meal that has been modernized and reformed. Most northerners have a soft spot for danwake. The original recipe made use of beans flour and cassava flour but now flour has replaced them both.

Ingredients

  1. Flour
  2. Baobab leaves powder (kuka)
  3. Potash solution(kanwa)
  4. Groundnut oil (man gyada)
  5. Pepper (yaji)
  6. Buillion cube (maggi)
  7. Vegetables of your choice

Cooking Instructions

    Sieve your flour in a clean bowl. Add your kuka. Combine them

    Add in your kanwa solution. Add some water. Mix thoroughly to achieve a good smooth consistency. (A batter that is not watery).

    Pour water in a pot and bring to a boil.

    Using your fingers or a spoon, scoop out small balls of the batter and put in the boiling water. Repeat step till batter is finished.

    Allow to boil for about 10 minutes constantly stirring to avoid spilling.

    Remove from pot and rinse in a bowl to wash off excess starch. Serve with groundnut oil, yaji and maggi. With your choice of sliced vegetables. I served mine with cucumber, tomatoes, onion and green pepper.
