Lemon Curry Pork & Potatoes

For a long time now there would be times where I'd drink way too much Pepsi. I found some recipes that went well with Pepsi so I came up with one that was more my style.
I added lemon to a curry fry that I've been making for a while.
Making without using red chili pepper should make it more palatable for kids. Recipe by Ayako

Cooking Instructions

Marinate the pork in the ● ingredients for 15 minutes.

Wash the potatoes and remove any spouts, leaving the skin on. Heat in the microwave (600W) for 3 minutes, turn over the potatoes and heat for another 3 minutes.

Cut the onion into wedges, finally chop the garlic and ginger, and chop the potatoes into bite sized pieces (skin or no skin is OK).

Heat a frying pan and add vegetable oil. Add the garlic, ginger, chilli peppers and once you start to smell them add in the onion and continue frying.

Once the onion has softened add in the marinated pork and fry. Take your leftover marinade and mix with ☆ ingredients.

Add the potatoes and lightly fry. While frying, pour in the sauce from Step 5 slowly moving the pan back and forth to mix properly.

All done. Feel free to add some black pepper.
