Miso Soup with Enoki Mushrooms and Komatsuna
Add the umami of enoki mushrooms to the nutrition of leafy greens. Featured on August 8, 2016, and again on September 23, 2018. Thank you for the support!Origin of this recipeI was inspired by Amanojako's miso soup with komatsuna and ginger, and I thought miso soup with komatsuna would be great. I combined it with enoki mushrooms, which I was researching for their umami. I couldn't find a simple recipe when I searched, so I created this one.

Shimeji and Wakame Miso Soup
Thank you so much for making this recipe popular! This simple miso soup with chewy shimeji mushrooms and mineral-rich wakame is easy to make and great for dieting. The origin of this recipe: I couldn't find a simple shimeji and wakame miso soup recipe online, so I decided to share mine. Shimeji mushrooms are low in calories and help with protein absorption and carbohydrate metabolism, which can aid in recovery from fatigue. Wakame is also low in calories and rich in minerals. Combined with fermented miso, it's a perfect match!

Miso Soup / Wakame and Tofu
First attempt at a soup I love.

Miso Soup with Nagaimo and Wakame Seaweed
I bought one whole nagaimo, and this is one of the dishes I made in an attempt to use it all up.Be careful when peeling the nagaimo, since your hands could slide off due to its sliminess. The salt content of the miso depends on the brand, so adjust its amount to your taste. I used wakame seaweed, but green onions, myoga ginger, okra, snow peas, etc. makes it delicious as well so give it a try. Recipe by Kawakamisan

My Family's Staple Dish Enoki Mushroom Miso Soup
I've cooked this staple miso soup for years. Please use your preferred Japanese dashi stock. The taste varies depending on the brand, so add the amount to your liking. (We use "Hondashi" in our family.)Enoki mushrooms cook through quickly, but cooking them for longer makes the umami seep out and it's delicious. Recipe by Yuucchi mama

Miso Soup with Mushrooms
When I used to live in the U.S. and didn't have access to Japanese mushrooms like shimeji and shiitake, I used mushrooms instead in miso soup. It's actually pretty tasty! Since then it's become one of my favorite dishes to make.Place the mushrooms in cold water (don't start boiling them with hot water) and simmer them very gently to extract their umami. If you are in a hurry, add a little dashi stock. Don't add too much miso since it will overwhelm the flavor of the mushrooms. Use plenty of mushrooms for the best result. For 3 servings. Daikon & Mushroom Miso Soup
Miso soup or “misoshiru” in Japanese is a traditional soup commonly eaten in Japan. It is super easy to make and dashi and miso paste are the two major ingredients used in this soup.Dashi or the soup stock can be easily made from scratch. If you don’t have the time or just want a quick and easy miso soup, dashi powder is also commonly used. Depending on regional and seasonal recipes, and personal preference, many ingredients such as mushroom, daikon, fish…. are often added. In this recipe, I use daikon and mushroom.(Youtube video: https://youtu.be/VZFw75myrew)

If you do that, then after adding the miso, don't let the soup come to a boil. For 4 servings. Recipe by Yuuyuu0221.

Miso Soup with Asparagus and Aburaage
I got a lot of asparagus from my parents and put it in the miso soup. Shijimi Clam Miso Soup
I saw directions for preparing the clams on a television program.I always forget whether its shijimi clams or asari clams that have to be cooked from cold water so I uploaded this for my own reference.Just make sure to get the clams to release the toxins and sand. Anything that was alive at some point has something to release. If you'd like, I recommend using kombu as your dashi stock. Of course you can just use the dashi stock from the clams, but the collaboration of dashi stocks is delicious. Recipe by Tatakaukokkusan
