Base Fritatta Recipe

This particular recipe makes a light fritatta. Double the veggies and cheese and use 8 eggs for a more robust meal that can serve 6. I make 2 or 3 at once with different ingredients and freeze them. Add a few generous spoonfuls of ricotta or cottage cheese in the whisked eggs stage to get a more creamy result.
Base Fritatta Recipe

Add a few generous spoonfuls of ricotta or cottage cheese in the whisked eggs stage to get a more creamy result.
Cooking Instructions

Put a large frying pan on medium heat with a dob of butter or swirl of olive oil.

Saute onions and mushrooms (with minced garlic if you wish) for 5 minutes, then remove from the pan. Keep the pan on the hot burner.

Beat eggs, then add half (or all) of cheese and all herbs/spices and stir until combined.

Pour egg mixture into hot pan and top with mushroom and onion mixture and zucchini. Use a spatula to push veggies around evenly. Do not stir. Place lid on and turn heat down to simmer.

After 5-10 minutes, place halved cherry tomatoes on top as shown in photo. You can sprinkle the other half of the cheese on at this point. Replace the lid.
Photo shows tomatoes added at the 5-minute mark. Frittata will look wet for most of cooking because of the steam that collects under the lid. This is normal and will not affect the taste.

Check fritatta at 30 minutes. Once it is firm, it is done (check by sliding a sharp knife in the middle. It should come away mostly clean of egg).

Remove from heat and let sit for 5 minutes before slicing into 4 or 6 pieces. Excellent with a side of store-bought or fresh homemade salsa.

This is just a base recipe. You can add whatever vegetables, proteins, and cheeses you like. Classic ham and mozzarella, parmesan and bacon, three-pepper, jalapeños and large diced tomatoes are other favourites. I sometimes add a second grated zucchini, a full 8oz carton of mushrooms, and rings of red onions to this version.
