Onion and Ginger Soup

I'm sensitive to the cold, so I tried making a soup with warming ingredients. I'm really into soup with consomme stock cubes, so I used them for the base flavour of this soup.

Ingredients

3 servings
  1. 1 largeOnion
  2. 20 gramsGinger
  3. 3Consomme soup stock cubes
  4. 1200 mlWater
  5. 2 tspSoy sauce
  6. 1Vegetable oil
  7. 1Parsley (optional)

Cooking Instructions

    Cut the onion in half, then slice thinly. Slice the ginger finely.

    Put a little vegetable oil in a saucepan and fry the onion and ginger over medium heat. When the onion has browned and wilted, add the water and soup stock and turn the heat to high.

    When it has boiled, turn the heat down to low-medium, and simmer for 15 minutes, skimming off the scum when necessary. Add the soy sauce to finish. Sprinkle parsley if you prefer. Check the taste and adjust the amount of soy sauce as necessary.
