Ingredients

  1. For Palak Puree:-
  2. 5 cupwater
  3. 250 gmspinach
  4. 1 inch ginger
  5. 1 clovegarlic
  6. 1-2green chillies
  7. Other ingredients:-
  8. 1 tbspbutter
  9. 2 tbspoil
  10. 200 gmpaneer cut into cubes
  11. 1 cinnamon
  12. 2cloves
  13. 2 podcardamom
  14. 1 tsproasted kasuri methi leaves
  15. 1onion finely chopped
  16. 1/2tomato finely chopped
  17. 1/4 tspgaram masala powder
  18. 1/2 tspturmeric powder
  19. 1/4 tspred chili powder
  20. 1/4 tspdry roasted coriander powder
  21. 1/4 tspdry roasted cumin powder
  22. 2 tbspfresh cream
  23. to tasteSalt
  24. 1/4 tspsugar

Cooking Instructions

    Rines the spinach leaves very well in running water.

    Boil 5 cups of water in a pot. When water comes to boil add the spinach leaves in a hot water and Blanche in water for 1-2 minutes. Switch off the flame. Immediately the spinach leaves into a ice cold water bowl. Allow the spinach leaves to be a in the ice cold water for 5 minutes. (This method helps in preserving the green colour of the spinach)

    Then drain the ice cold water. Add the spinach leaves in a blender jar with ginger garlic and green chillies. Make a smooth puree. No need to add water. Keep it aside.

    Heat a pan with butter and slightly toss the paneer cubes for 1 minutes. Don't change the colour of panner. Just toss it and keep it aside..

    Now in same pan add oil and roasted the all whole spices till it turns aromatic.

    Further add chopped onion, saute till it turns golden brown. Now add chopped tomatoes and saute till the tomatoes turns soft and mushy. Add all spices and cook well.

    Now add prepared spinach puree with 1/4 cup water and salt and sugar. Mix well. Simmer for 7-8 minutes or more till the spinach is cooked. The gravy will also thicken by now.

    Stir and add garam masala powder and dry roasted kasuri methi leaves. Stir again and then add paneer cubes. Mix gently and switch off the flame.

    Lastly add fresh cream. Stir gently again so that the cream gets incorporated in the gravy uniformly.

    Stir and serve palak Paneer hot with roti Paratha or naan...
