Cooking Instructions
- 1
First, bring water to a boil to blanch the spinach. Once the water is boiling, add the cleaned spinach leaves and a pinch of salt. After 2-3 boils, turn off the heat and transfer the spinach to ice water or cold water to retain its color.
- 2
In a pan, add oil and cumin seeds. Once they crackle, add finely chopped onions and cook until they turn slightly pink. Then add ginger, garlic, and green chili paste and stir.
- 3
Add chopped tomatoes, mix, and add salt. Cover and cook on low heat for 5 minutes until the tomatoes soften. Meanwhile, puree the spinach.
- 4
Wash and cut the paneer into cubes. Once the tomatoes are soft, add the spices and stir. Crush the dried fenugreek leaves with your hands and add them. Once the spices release oil, add the spinach puree and paneer, and mix.
- 5
Cook on high heat, then add a tablespoon of fresh cream and mix. Add garam masala powder and mix again.

Your dhaba-style Palak Paneer is ready. Serve it with roti or naan with love. Thank you.

I love paneer cubes dipped in spinach sauce (and frankly who doesn't!). One of my best friends from my past life in Michigan (shout out to the one and only Vaibhav Sharma ladies and gentlemen) cooked it during a couple of get togethers (he is a pro!). Hence, I took up the challenge of perfecting it myself. This one in the honor of Vaibhav and numerous occasions he has cooked it for me. Sunpreet Singh Arora -

Palak Paneer Palak Paneer
My dad has been taking us for Northern Indian cuisine since I can remember. Our favorite restaurant was Pakeeza's at Right Angle in Seksyen 14, which is still there and it’s my turn now to take him and my mum whenever I visit home. A must-order would be the palak paneer... the type with palak you can chew rather than made into a paste. So this first attempt follows that memory of the dish being chunky instead of saucey. 😊 The Boggler -
