The total (possibly the only) Asian-Fusion smoked chicken experience, lol! Like most meat dishes I've created, it's an all day journey! This journey is 4 creations; the brine, the rub, the honey butter, and the dipping sauce! All combined in a harmoinuos, delicious chicken dining experience!

Ingredients

  1. 2whole fryers chickens, intestines and neck removed
  2. 1 bunchcilantro
  3. Prepare brine as follows:
  4. 2 gallonswarm water
  5. 5 lbscubed ice
  6. 1 cupgranulated sugar
  7. 1 cuplight brown sugar
  8. 1/2 cupcoarse kosher salt
  9. 1/2 cupvegetable oil
  10. 1/4 cupsoy sauce
  11. 1/4 cupWorcestershire
  12. 1/4 cupnuk mam (fish sauce)
  13. 1/4 cupgarlic chili paste
  14. 1/4 cupsesame oil
  15. 1/4 cupyellow mustard
  16. 1/2 cupapple cider vinegar
  17. 2lemons, quartered, squeezed
  18. 2limes, quartered, squeezed
  19. 2oranges, quartered, squeezed
  20. 1red onion quartered
  21. 1white onion quartered
  22. 2 sprigfresh rosemary
  23. 1jalapeño, quartered
  24. Prepare rub as follows:
  25. 1/2 cupfine kosher salt
  26. 1 cupdark brown sugar
  27. 2 Tbspground white pepper
  28. 2 Tbspsmoked paprika
  29. 1/4 cupgranulated garlic
  30. 1/4 cuponion powder
  31. 2 TbspTajin
  32. 1 Tbspground mustard
  33. 1 Tbspcelery seed
  34. Prepare Honey Butter as follows:
  35. 2 cupshoney
  36. 2 cubessalted butter
  37. 1/4 tspground cloves
  38. Prepare Dipping Sauce as follows:
  39. Mash together, 2 cups Huy Fong chili garlic sauce
  40. 2 Tbsplime curd
  41. 1 tspnuk mam (fish sauce)
  42. 1 tspsoy sauce
  43. 2 Tbspgranulated sugar
  44. 1 bunchgreen onions minced
  45. 2 Tbsprice vinegar

Cooking Instructions

    Brine: Mix all ingredients together in brine bag (except ice) squeezing fruit and adding fruit to bag

  2. 2

    Cut fryers in half and add to brine, add ice ontop of chicken

  3. 3

    Seal bag and place in ice chest for 3 hours

  4. 4

    Preheat smoker to 225° using a sweet wood like cherry or apple

  5. 5

    Rub: mix all ingredients in a mixing bowl, set aside

  6. 6

    Honey butter: soften butter (do not melt) mix all ingredients, set aside

  7. 7

    Dipping Sauce: mix all ingredients, smash together, chill and set aside

  8. 8

    Remove chicken from brine, rinse and pat dry

  9. 9

    Rub chicken with rub and place in smoker for 3.5 hours

  10. 10

    Baste every 45 min with honey butter

  11. 11

    Garnish with cilantro, serve hot, remove skin and enjoy!!!
