Methi Malai Matar Paneer

It is a popular Indian subzi which is made especially during winters when fresh methi (fenugreek) is in season!
This recipe combines methi, matar (green peas), malai (cream) & Paneer in a rich, sweet and creamy curry!

Ingredients

30 mins.
2 people
  1. 1 cupfresh fenugreek leaves chopped
  2. 1/2 cupgreen peas (boiled)
  3. 50 gmPaneer
  4. 4onions
  5. 1 tspGarlic ginger Green chillies paste
  6. 1 tbspmelon seeds
  7. 6cashews
  8. 2cardamom pods
  9. 1clove
  10. 1small cinnamon stick
  11. 1 tspgaram masala
  12. 1 tspsugar
  13. 1dry red chilli
  14. 1 tspfresh malai
  15. 1/2 cupmilk
  16. Oil
  17. Salt to taste

Cooking Instructions

    Soak cashew nuts and melon seeds in warm water for half an hour. Then make paste of it.

    Now in a pan, heat some oil & add cardamom pods, clove & cinnamon & saute it. Then add onion, garlic ginger green chillies paste & saute it. Let it cool completely & then make a paste in mixer & strain it & keep aside.

    Now in the same pan, add oil/ ghee, add dry red chilli & add onion paste which we have made & saute it.

    Then add cashews paste & saute it. To adjust the consistently, add some milk. After few minutes, add boiled green peas, fenugreek leaves and mix it.

    Now add salt, sugar, garam masala & mix everything well. Let it cook for another few minutes till the fenugreek leaves are cooked well. Cover the lid.

    Now add paneer cubes & fresh malai to it & cook for another two minutes.

    The delicious methi malai matar paneer subzi is ready to serve. Have it with rotis, parathas or naan.
